Pesto Egg Salad
Pesto Ingredients
- 1 cup of packed basil
- 1/4 cup of olive oil
- 1/4 cup of parmesan cheese
- 1/4 cup of pine nuts (you can also use walnuts or cashews)
- 2 minced garlic cloves
- 1/4 tsp salt
Egg Salad Ingredients
- 12 hard-boiled eggs
- 1/4 cup of plain yogurt
- 2 celery sticks
Preparation
Blend all pesto ingredients in a food processor until smooth. Slice celery into small chunks. Mix eggs, celery, yogurt, and pesto. Salt and pepper to taste. Serve on sourdough bread.
Creamy Egg Salad with Capers
Ingredients
- 8 hard boiled eggs
- 1 tbsp mayonnaise
- 1 tbsp mustard
- 2 diced celery sticks
- 2 tbsp drained, chopped capers
- Salt and pepper
- Sliced tomatoes
- Sliced red onion
Preparation
Chop eggs and combine with mayo, mustard, celery, capers. Add salt and pepper to taste. Stir it all together until thoroughly mixed. Serve on bread with tomatoes and red onion.
