Spring is officially on it’s way and with that should come some delicious spring recipes to experiment with. Great Harvest in Spokane would like to share three of our favorite spring side dishes with you today. Don’t forget to add the ingredients to your next grocery list. You won’t regret it.
This salad with avocado and pistachio dressing is a perfect spring treat:
Gather your ingredients:
¼ of an avocado
½ cup of buttermilk
2 tsps of sherry or red wine vinegar
salt and pepper to taste
6 cups of mixed lettuce-whatever you prefer (butter lettuce, romaine, kale, cabbage
⅓ cup of shelled and roasted pistachios
Make something delicious:
Blend avocado, buttermilk, vinegar, ½ tsp salt, and ¼ tsp pepper in a food processor
Drizzle this dressing over the lettuce of your choice and top with pistachios

What You’ll need:
2 tbs of pine nuts
2 tbs of olive oil
2 pounds of fresh asparagus, trimmed and chopped into 2 in pieces
Salt and pepper to taste
1 tsp of very thin lemon zest
1 ounce of shaved Parmesan cheese
Directions:
Heat the oven to 350F
Using a baking sheet, spread the pine nuts and toast them
Using a large skillet, heat the oil over medium heat
Begin to cook the asparagus, adding salt to cookToss the asparagus regularly
Lastly, add the pine nuts
Sprinkle with lemon zest and Parmesan as desired
