Here at Great Harvest in Spokane we’re passionate about making the best of seasonal ingredients; that’s why we offer recipes for dishes such as this delicious winter vegetable medley. Fortunately, winter is almost over and spring is fast approaching, so with that in mind we’d like to offer a delightful springtime recipe for spaghetti alla primavera to make the best of what the season has to offer.
You’ll need (serves 4 - 6):
6 tablespoons good quality olive oil
3 cloves garlic (minced)
6 ounces mushrooms (preferably button mushrooms, quartered)
1 cup asparagus tips
1 cup small broccoli florets
½ cup frozen peas
1 small zucchini (quartered lengthwise and cut to 1" lengths)
1 pound spaghetti
1 cup heavy cream
⅔ cup grated parmesan
2 tablespoon unsalted butter
Salt and pepper
1 cup grape or cherry tomatoes (halved)
2 tablespoons thinly shredded basil
½ cup pine nuts (lightly toasted - you can do this by tossing them around in a hot, non-oiled pan)
Method:
Bring a large pot of salted water to a boil, add the spaghetti and cook until al dente (times will vary so look at the instruction on the packet). Meanwhile, blanch the asparagus, broccoli, peas and zucchini by bringing a separate pot of water to a boil and cooking them for 30 seconds to a minute, then plunging them into iced (or at least very cold) water and setting them aside for later. Make sure to keep an eye on your pasta; when it’s al dente, drain it and set it aside.
Heat 5 tablespoons of the olive oil in a large pan over a medium heat. Add ⅔ of the garlic and cook until golden. Add the mushrooms and cook until they’re also golden (a further 3 minutes or so). Drain and add the blanched vegetables and cook for another 3 minutes. Add your cooked pasta, cream, parmesan, and butter, season with salt and pepper, and toss to combine.
Bring the remaining oil and garlic, tomatoes, and basil to a simmer over medium heat, then pour over the pasta and garnish with pine nuts. Serve on warmed plates and enjoy!
