If you’re looking for a substitute to those sugar filled energy bars you buy from the grocery store, The Great Harvest Bread Co. of Spokane has the ideal treat full of energy, but way more healthy and delicious. It’s the perfect combination of oats, coconut and chocolate chips, all combined with peanut butter and honey to give them a sweet, smooth, and exquisite taste as well as a great boost of energy! These bite size energy treats are an easy and tasty way to start any day.
YOUR INGREDIENTS:
- 2/3 cup organic peanut butter (smooth or chunky)
-1 cup oats
-2/3 cup of toasted and shredded coconut
-1/3 cup local honey
-1/2 cup mini chocolate chips
-1 tsp vanilla
HOW TO MAKE THEM:
-Mix all the dry ingredients in a large bowl first.
- Add peanut butter, honey and vanilla and mix until everything looks well combined.
-Roll/form the mixture into little balls and place on parchment paper.
-Put into the fridge for about 15-20 minutes until they become firm.-Transfer to an airtight container and store in a cool place.
Tips:
These are best enjoyed cooled, as they become soft and gooey with a little heat. If you are taking them on the go, use portable ice packs and an insulated container to keep them firm and delicious.
Since these little treats contain chocolate and some sugars, they are not necessarily health food. However, what they lack in nutritional value, they more than make up for in energy. Enjoy them in moderation as an energy source and NOT like a cookie or a treat. They’re certainly better for you than store bought energy bars.
