 Here at Great Harvest in Spokane we love to share our favorite recipes with our customers, like this delicious fruit jam for spring. We’d like to continue that tradition today by sharing another great spring and summer recipe. You can either serve it chilled or warm and it’s a great pairing for chicken fajitas, tacos, or even by itself on chips or tortillas, mango radish salsa.

Here’s what you’ll need:

  • 3 cups of diced mangos, 2 large mangos should do
  • ¼ cup of chopped cilantro
  • 1 tbs of lime juice
  • ¼ tsp of salt
  • 1 cup of diced radishes

Preparation of the Salsa:

  1. Chop the mangoes-remember that mangoes can be uncooperative to slice, depending on their firmness, so have patience
  2. Next, shop the radishes-both should be in small chunks
  3. In a small bowl, toss the mangoes, cilantro, lime juice and salt
  4. Add the radishes and stir-taste and determine if more spices need to be added
  5. Leave in the refrigerator for up to a day, remembering that the longer you leave the radishes in, the spicier it will get

Helpful tips to remember:

  • If you desire a less spicy salsa then do not add the radishes until just before serving
  • Experiment with your mangos-you may prefer the sweetest mangoes with this recipe or you may like a more tart variation
  • You can always add a small pepper to the mix if you’re looking for something spicier, we’d go with jalapeno but remember to take out the seeds
  • This salsa will yield 8 small servings-it contains no fat and only has about 45 calories per serving
