How To Make an Impressive Clam Chowder

Got a bread bowl and want to put something delicious into it? Try this clam chowder recipe from Duke's Award Winning Chowder House, a Seattle staple.

Ingredients

  • 2 cups of diced red potatoes
  • 4 slices of bacon
  • ½ cup of butter
  • 2 cups of diced onion
  • 2 cups of diced celery
  • 1 tbsp of chopped fresh garlic
  • ½ cup of flour
  • 2 tbsp of clam base (Duke's uses the Gold Label Clam brand base from Custom Culinary, available in 1 lb containers on Amazon.com)
  • 1 ½ cups of clam juice
  • 1 ½ cups of milk
  • 2 ½ cups of heavy whipping cream
  • ½ tsp of fresh organic basil leaves, diced small
  • 1 tsp of fresh organic thyme, stems removed and diced small
  • ½ tsp of dried marjoram
  • ½ tsp of black pepper
  • 2 tbsp of fresh organic parsley, stems removed and diced small
  • 1 tbsp of fresh organic dill, stems removed and diced small
  • 1 lb of clams

Preparation

Blanch potatoes in boiling water for 3 to 5 minutes until tender, then place in ice water for an additional 3 to 5 minutes. Set them aside. Cook bacon until crispy. Add butter, onions, celery, and garlic, and sauté until tender. Then add flour and stir well to make the roux. Continue stirring and bring the roux to 175 degrees and cook for exactly 7 minutes. Do not let the roux brown. Separately mix the clam base with the clam juice until fully dissolved. Add the mixture to the roux. Add the milk and cream, and then the herbs. Stir constantly with a wire whisk until almost boiling (185 degrees). Add blanched red potatoes and the clams. Simmer at 185 degrees for 2 to 3 minutes or if possible, several hours. The longer you cook, the more the herbs will infuse with the chowder and the better it will taste. Place it in your bread bowl and serve at 165-175 degrees. If not serving until the next day, refrigerate the chowder in a 2-inch deep pan. If the pan is not exactly 2-inches deep, the chowder will not chill enough in time for safe food handling.
