If you don’t want to bake a pumpkin pie to top off your Thanksgiving this year, you have plenty of other options. We here at Great Harvest in Spokane would like to offer you a recipe for a salted caramel cheesecake that will provide the perfect end to the perfect feast.

Ingredients:

For the crust:
1 ¼ cups graham crackers (crushed into crumbs)
½ stick melted butter (4 tablespoons)
3 tablespoons granulated sugar

For the filling:
4 eight oz. packets of cream cheese (2 lbs)
1 cup granulated sugar
3 large eggs and 1 extra egg yolk
1 teaspoon vanilla extract

For the caramel and topping:
1 cup granulated sugar
1 tablespoon water
½ stick melted butter (4 tablespoons)
½ cup heavy cream
1 cup roughly-chopped pecans
1 hefty pinch of sea salt

Method:

- Preheat your oven to 325ºF. Grease a 9-inch cake tin and set it to one side.
- Mix together the graham cracker crumbs, butter and sugar in a bowl until well combined. Press this mixture evenly across the bottom of your cake tin and set aside.
- Combine your cream cheese and sugar (use a stand mixer with paddle attachment if you have one) until light and airy. Don’t skimp on the mixing here as consistency is key!
- Add the yolk and then the eggs one at a time, mixing thoroughly after each addition. Add the vanilla extract and combine well.
- Pour the mixture into the prepared cake tin and bake for around 40 minutes or until a skewer poked into the cake comes out clean. Turn off your oven, leave the door open, and allow your cake to cool completely.
- Make your caramel by combining the sugar and water in a heavy-based pan. Place this on a medium-high heat and bring to a boil. Let it boil, stirring often, until the mixture starts to brown and immediately add the butter and stir thoroughly. 
- Take it off the heat, add your heavy cream and mix well.Pour your caramel mixture over your cheesecake and scatter the pecan pieces over the top. Sprinkle with a generous pinch of sea salt and your cake is done!
